Simple Sesame & Ginger Soba Noodles

These noodles are cold, refreshing, and take about ten minutes from start to finish. They're perfect for days when you want something light but still satisfying. The sesame and ginger dressing is punchy and bright. You can eat them straight from the bowl, standing in the kitchen, avoiding eye contact with your housemates. No judgement.
Ingredients (Serves 1):
- 100g soba noodles (or wholewheat noodles)
- 1 tbsp tahini
- 1 tbsp tamari or soy sauce
- 1 tsp sesame oil
- 1 tsp rice vinegar or lemon juice
- 1 tsp maple syrup
- 1 tsp fresh ginger, grated
- 1–2 tbsp warm water, to thin
- To serve: sliced cucumber, spring onion (green part only), sesame seeds
Method:
- Cook the noodles according to packet instructions. Drain and rinse under cold water to cool them down.
- Meanwhile, in a small bowl, whisk together the tahini, tamari, sesame oil, rice vinegar, maple syrup, and ginger. Add warm water a little at a time until it's a pourable dressing consistency.
- Toss the cold noodles with the dressing.
- Top with sliced cucumber, spring onion, and sesame seeds.
- Eat immediately, or pack it up for later. It's great cold.
Why it's gut-friendly: Soba noodles are made from buckwheat, which is gluten-free and rich in fibre. Ginger is anti-inflammatory and aids digestion. Tahini (sesame paste) provides healthy fats and minerals.
