Simple Salmon & Avocado Sushi Bowl

All the joy of sushi without the faff of rolling things. This bowl is fresh, satisfying, and comes together in the time it takes to cook some rice. The salmon and avocado are a classic combination for good reason.

Why it's gut-friendly: Salmon is rich in omega-3 fatty acids, which reduce inflammation and support brain health. Avocado is packed with fibre and healthy fats. Cucumber is hydrating and gentle. Pickled ginger (if you tolerate it) can aid digestion.

Ingredients (Serves 1):

  • 100g cooked salmon (tinned is fine, or use leftovers)
  • 150g cooked brown or white rice, warm or room temperature
  • ½ avocado, sliced
  • ¼ cucumber, diced
  • 1 sheet of nori seaweed, snipped into strips
  • 1 tsp sesame seeds
  • Soy sauce or tamari, to serve
  • Pickled ginger (optional)

For a quick dressing:

  • 1 tsp sesame oil
  • 1 tsp rice vinegar or lemon juice
  • Pinch of salt

Method:

  1. In a small bowl, whisk the dressing ingredients together and toss with the warm rice.
  2. Place the dressed rice in a bowl.
  3. Flake the salmon and arrange on top of the rice.
  4. Add the avocado slices and cucumber.
  5. Scatter with the nori strips and sesame seeds.
  6. Serve with soy sauce or tamari on the side, and pickled ginger if using.
  7. Mix everything together as you eat.
