Simple Baked Sweet Potato with Cottage Cheese & Chives

A baked sweet potato is one of the easiest, most comforting lunches there is. Split open and topped with cottage cheese, chives, and black pepper. It's warm, creamy, and takes almost no effort. The oven does the work.

Ingredients (Serves 1):

  • 1 large sweet potato
  • 150g cottage cheese
  • A handful of fresh chives, snipped
  • Black pepper
  • A drizzle of olive oil

Method:

  1. Preheat oven to 200°C (180°C fan). Prick the sweet potato all over with a fork.
  2. Bake for 45–60 minutes until soft all the way through. (Or microwave for 8–10 minutes if you're in a rush.)
  3. Split open. Top with cottage cheese, chives, black pepper, and a drizzle of olive oil.

Why it's gut-friendly: Sweet potatoes are rich in soluble fibre and vitamin A. Cottage cheese is a fermented dairy product, providing probiotics. Chives add prebiotic fibre.
