Simple Avocado & Black Bean Wrap

This is the lunch for when you need something fast, portable, and satisfying. Mashed avocado, black beans, a squeeze of lime, and a sprinkle of cumin. Wrap it up in a tortilla and you've got lunch in about ninety seconds.

Ingredients (Serves 1):

  • ½ ripe avocado
  • ½ x 400g tin of black beans, rinsed and drained
  • Juice of ½ lime
  • ¼ tsp ground cumin
  • Salt
  • 1 large tortilla wrap (wholemeal if possible)
  • A handful of spinach or lettuce

Method:

  1. Mash the avocado roughly with a fork. Stir in the black beans, lime juice, cumin, and a pinch of salt.
  2. Warm the tortilla in a dry pan for 30 seconds per side.
  3. Pile the avocado mixture onto the tortilla. Top with spinach or lettuce.
  4. Wrap tightly. Slice in half. Eat.

Why it's gut-friendly: Avocado is packed with fibre and healthy fats. Black beans are prebiotic powerhouses. Lime juice adds vitamin C. A quick, fibre-rich lunch.
