Roasted Carrot & Hummus Open Sandwich

This is a warm, open-faced sandwich. Roasted carrot batons, piled onto sourdough spread with good hummus, finished with a handful of rocket. It's sweet, savoury, and satisfying.
Ingredients (Serves 1):
- 2 carrots, cut into batons
- 1 tsp olive oil
- ½ tsp cumin
- Salt
- 1 thick slice of sourdough bread
- 3 tbsp hummus
- A handful of rocket
Method:
- Preheat oven to 200°C (180°C fan). Toss the carrots with olive oil, cumin, and salt. Roast for 20–25 minutes until tender.
- Toast the sourdough. Spread generously with hummus.
- Pile the warm carrots onto the hummus. Top with rocket.
- Eat immediately.
Why it's gut-friendly: Carrots are rich in soluble fibre. Hummus (chickpeas and tahini) is a prebiotic powerhouse. Sourdough is fermented and easier to digest.
