Quick Miso & Tofu Ramen Bowl

This is the speediest version of ramen you'll ever make. No bone broth. No hours of simmering. Just miso, ginger, tofu, noodles, and whatever veg is lurking in the fridge. It's warm, comforting, and takes about ten minutes.

Ingredients (Serves 1):

  • 500ml water
  • 1 tbsp white miso paste
  • 1 tsp fresh ginger, grated
  • 1 tsp tamari or soy sauce
  • 50g firm tofu, cubed
  • 50g rice noodles or ramen noodles
  • A handful of spinach
  • 1 spring onion, sliced (green part only)
  • A drizzle of sesame oil

Method:

  1. Cook the noodles according to packet instructions. Drain and set aside.
  2. Bring the water to a gentle simmer. In a small bowl, mix the miso with a few tablespoons of the hot water to loosen it, then stir back into the pan.
  3. Add the ginger, tamari, and tofu. Warm through for 2–3 minutes.
  4. Place the noodles in a deep bowl. Pour the broth over them.
  5. Top with spinach (it will wilt in the hot broth), spring onion, and a drizzle of sesame oil.

Why it's gut-friendly: Miso is fermented, providing probiotics. Ginger aids digestion. Tofu is easy to digest and provides protein.
