Quick Kimchi & Tofu Stir-Fry

Kimchi fried quickly with firm tofu and a splash of soy. It's spicy, tangy, and incredibly fast. The kimchi provides probiotics—just don't overcook it, or you'll kill the good bacteria.

Ingredients (Serves 1):

  • 100g firm tofu, cubed
  • 1 tsp sesame oil
  • 100g kimchi (the refrigerated kind), roughly chopped
  • 1 tsp tamari or soy sauce
  • 1 spring onion, sliced
  • Cooked brown rice to serve

Method:

  1. Heat the sesame oil in a wok or frying pan. Fry the tofu until golden on all sides.
  2. Reduce the heat to low. Add the kimchi and tamari. Warm through gently for 1–2 minutes. You want it hot but not boiling.
  3. Serve over rice, topped with spring onion.

Why it's gut-friendly: Kimchi is a fermented probiotic bomb. Tofu provides plant protein. Brown rice adds prebiotic fibre.
