Quick Kimchi & Tofu Stir-Fry

Kimchi fried quickly with firm tofu and a splash of soy. It's spicy, tangy, and incredibly fast. The kimchi provides probiotics—just don't overcook it, or you'll kill the good bacteria.
Ingredients (Serves 1):
- 100g firm tofu, cubed
- 1 tsp sesame oil
- 100g kimchi (the refrigerated kind), roughly chopped
- 1 tsp tamari or soy sauce
- 1 spring onion, sliced
- Cooked brown rice to serve
Method:
- Heat the sesame oil in a wok or frying pan. Fry the tofu until golden on all sides.
- Reduce the heat to low. Add the kimchi and tamari. Warm through gently for 1–2 minutes. You want it hot but not boiling.
- Serve over rice, topped with spring onion.
Why it's gut-friendly: Kimchi is a fermented probiotic bomb. Tofu provides plant protein. Brown rice adds prebiotic fibre.
