Mozzarella & Roasted Cherry Tomato Pasta Salad

This is a warm pasta salad—or a cold one, if you prefer. Pasta tossed with roasted cherry tomatoes, torn mozzarella, and fresh basil. It's simple, satisfying, and great for meal prep. Make a big batch and eat it for lunch all week.
Ingredients (Serves 2):
- 150g pasta (any shape)
- 200g cherry tomatoes
- 1 tbsp olive oil
- Salt and pepper
- 125g mozzarella, torn
- A handful of fresh basil leaves
- A drizzle of balsamic vinegar (optional)
Method:
- Preheat oven to 200°C (180°C fan). Toss the cherry tomatoes with olive oil, salt, and pepper. Roast for 15–20 minutes until soft and bursting.
- Cook the pasta according to packet instructions. Drain.
- Toss the warm pasta with the roasted tomatoes, mozzarella, and basil.
- Drizzle with a little balsamic if you like. Eat warm or cold.
Why it's gut-friendly: Mozzarella is a fresh, easily digestible cheese. Tomatoes are rich in lycopene. Basil is anti-inflammatory. A simple, satisfying lunch.
