Gut-Healthy Mediterranean Chicken & Lentil Power Bowl

This is the perfect "build your own" lunch. It's packed with colour, texture, and a huge variety of gut-friendly ingredients. It looks impressive. It tastes fresh. And it's endlessly adaptable based on what you have in the fridge.

Why it's gut-friendly: This bowl is a fibre and antioxidant superstar. Lentils, greens, tomatoes, cucumber—all feeding your good gut bacteria. The yoghurt sauce adds a probiotic boost. The olive oil is anti-inflammatory.

Ingredients (Serves 2):

  • 2 chicken breasts or 4 boneless thighs
  • 1 tbsp olive oil, plus extra for drizzling
  • 1 tsp dried oregano
  • Salt and pepper
  • 1 x 250g pouch of pre-cooked Puy lentils
  • 100g cherry tomatoes, halved
  • ½ cucumber, diced
  • Large handful of rocket or mixed leaves

For the yoghurt sauce:

  • 100g Greek yoghurt
  • 1 small garlic clove, crushed
  • 1 tbsp lemon juice
  • Pinch of salt

Method:

  1. Rub the chicken with olive oil, oregano, salt, and pepper. Pan-fry in a hot pan for 6-8 minutes per side until cooked through, then slice. (Or bake at 180°C for 20-25 minutes.)
  2. Meanwhile, warm the lentils according to packet instructions—usually 2 minutes in the microwave or a quick warm-through in a pan.
  3. In a small bowl, mix the yoghurt sauce ingredients together.
  4. Assemble your bowls: start with a bed of rocket, top with the warm lentils, cherry tomatoes, cucumber, and sliced chicken.
  5. Drizzle generously with the yoghurt sauce.
  6. Eat immediately, feeling vaguely like you're on holiday.
