Gentle Egg Drop Soup with Peas

This is the soup I make when I need something warm, soothing, and incredibly easy. It's just stock, peas, and ribbons of egg, swirled into the hot broth. It's light, comforting, and takes about five minutes. Perfect for days when you're feeling fragile.

Ingredients (Serves 1):

  • 500ml chicken or vegetable stock
  • 50g frozen peas
  • 1 egg, beaten
  • 1 tsp tamari or soy sauce
  • 1 tsp sesame oil
  • 1 spring onion, sliced (green part only)

Method:

  1. Bring the stock to a gentle simmer in a small saucepan.
  2. Add the peas and cook for 2 minutes.
  3. While the stock is gently simmering, slowly drizzle in the beaten egg, stirring gently with a fork. The egg will cook instantly into soft ribbons.
  4. Remove from heat. Stir in the tamari and sesame oil.
  5. Ladle into a bowl. Top with spring onion. Sip slowly.

Why it's gut-friendly: This soup is incredibly easy to digest. Eggs provide protein. Peas add fibre. A light, soothing meal for sensitive stomachs.
