Edamame & Brown Rice Power Bowl

This is a plant-based powerhouse. Brown rice, edamame, shredded carrot, cucumber, and avocado, all drizzled with a miso-ginger dressing. It's fresh, filling, and packed with things your gut loves.

Ingredients (Serves 1):

  • 150g cooked brown rice
  • 100g shelled edamame, cooked
  • 1 carrot, grated
  • ¼ cucumber, diced
  • ½ avocado, sliced

For the dressing:

  • 1 tsp white miso paste
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • ½ tsp fresh ginger, grated
  • 1 tbsp warm water

Method:

  1. Whisk the dressing ingredients together until smooth.
  2. Place the warm rice in a bowl. Top with edamame, carrot, cucumber, and avocado.
  3. Drizzle with the dressing. Eat immediately.

Why it's gut-friendly: Brown rice provides prebiotic fibre. Edamame are young soybeans, packed with plant protein and fibre. Miso is fermented, adding probiotics. Avocado provides healthy fats.
