Creamy Coconut & Courgette Soup

This soup is light, creamy, and deeply green. It's made with courgettes and coconut milk, which makes it rich without being heavy. It's perfect for days when you want something warm but not stodgy. It's also vegan and takes about twenty minutes.

Ingredients (Serves 2–3):

  • 1 tbsp coconut oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 3 medium courgettes, roughly chopped
  • 400ml vegetable stock
  • 200ml coconut milk
  • Salt and pepper
  • Fresh basil or mint to serve

Method:

  1. Heat the coconut oil in a large pot. Add the onion and cook for 5 minutes until soft.
  2. Add the garlic and courgettes. Cook for 5 minutes more.
  3. Pour in the stock. Bring to a boil, then reduce heat and simmer for 10 minutes until the courgettes are tender.
  4. Stir in the coconut milk.
  5. Blend with a stick blender until completely smooth.
  6. Season with salt and pepper. Serve with fresh herbs.

Why it's gut-friendly: Courgettes are hydrating and gentle on the stomach. Coconut milk provides healthy fats. It's light, anti-inflammatory, and easy to digest.
