Chickpea & Artichoke Mason Jar Salad

This is a salad you make in a jar, which means it's portable and stays fresh until you're ready to eat. Chickpeas, artichoke hearts, roasted peppers, and a lemon dressing. It's bright, satisfying, and perfect for days when you need lunch on the go.
Ingredients (Serves 1):
- ½ x 400g tin of chickpeas, rinsed and drained
- 2 artichoke hearts from a jar, quartered
- 2 roasted red peppers from a jar, sliced
- A handful of rocket or spinach
For the dressing:
- 2 tbsp olive oil
- Juice of ½ lemon
- Pinch of salt and pepper
Method:
- Whisk the dressing ingredients and pour into the bottom of a jar.
- Layer the chickpeas, artichokes, peppers, and rocket on top.
- Seal the jar. When ready to eat, shake well and tip into a bowl.
Why it's gut-friendly: Chickpeas are prebiotic. Artichokes are a prebiotic powerhouse—they're one of the best foods for feeding good gut bacteria. Lemon and olive oil add gentle digestive support.
