Chickpea & Artichoke Mason Jar Salad

This is a salad you make in a jar, which means it's portable and stays fresh until you're ready to eat. Chickpeas, artichoke hearts, roasted peppers, and a lemon dressing. It's bright, satisfying, and perfect for days when you need lunch on the go.

Ingredients (Serves 1):

  • ½ x 400g tin of chickpeas, rinsed and drained
  • 2 artichoke hearts from a jar, quartered
  • 2 roasted red peppers from a jar, sliced
  • A handful of rocket or spinach

For the dressing:

  • 2 tbsp olive oil
  • Juice of ½ lemon
  • Pinch of salt and pepper

Method:

  1. Whisk the dressing ingredients and pour into the bottom of a jar.
  2. Layer the chickpeas, artichokes, peppers, and rocket on top.
  3. Seal the jar. When ready to eat, shake well and tip into a bowl.
