Avocado & Edamame Smash on Rye

A vibrant green, protein-packed alternative to plain avocado toast. Edamame beans blitzed with avocado, lemon, and mint. It's fresh, creamy, and keeps you full for hours.

Ingredients (Serves 1):

  • 100g frozen edamame, cooked and drained
  • ½ ripe avocado
  • Juice of ½ lemon
  • A handful of fresh mint
  • Salt
  • 2 slices of dark rye bread

Method:

  1. Put the edamame, avocado, lemon juice, mint, and salt in a small blender or food processor. Pulse until combined but still chunky.
  2. Toast the rye bread and pile the smash on top.

Why it's gut-friendly: Edamame are young soybeans, rich in fibre and plant protein. Avocado provides healthy fats. Rye is a prebiotic.
