Avocado & Black Bean Quesadilla

This is what I make when I want something warm, crispy, and satisfying. A tortilla filled with mashed avocado, black beans, and a little cheese, toasted until golden. It's comfort food that happens to be packed with fibre.
Ingredients (Serves 1):
- 1 large tortilla wrap
- ½ avocado, mashed
- ½ x 400g tin of black beans, rinsed and drained
- A small handful of grated cheese (optional)
- A squeeze of lime juice
- A pinch of cumin
- Olive oil for frying
Method:
- Spread the mashed avocado over half the tortilla.
- Top with the black beans, cheese if using, lime juice, and cumin.
- Fold the tortilla in half to create a half-moon shape.
- Heat a small non-stick pan with a drizzle of olive oil over medium heat.
- Fry the quesadilla for 2–3 minutes per side, until golden and crisp and the cheese has melted.
- Slice into wedges. Eat immediately.
Why it's gut-friendly: Avocado provides fibre and healthy fats. Black beans are prebiotic powerhouses. It's a satisfying, gut-loving lunch.
