Avocado & Black Bean Quesadilla

This is what I make when I want something warm, crispy, and satisfying. A tortilla filled with mashed avocado, black beans, and a little cheese, toasted until golden. It's comfort food that happens to be packed with fibre.

Ingredients (Serves 1):

  • 1 large tortilla wrap
  • ½ avocado, mashed
  • ½ x 400g tin of black beans, rinsed and drained
  • A small handful of grated cheese (optional)
  • A squeeze of lime juice
  • A pinch of cumin
  • Olive oil for frying

Method:

  1. Spread the mashed avocado over half the tortilla.
  2. Top with the black beans, cheese if using, lime juice, and cumin.
  3. Fold the tortilla in half to create a half-moon shape.
  4. Heat a small non-stick pan with a drizzle of olive oil over medium heat.
  5. Fry the quesadilla for 2–3 minutes per side, until golden and crisp and the cheese has melted.
  6. Slice into wedges. Eat immediately.

Why it's gut-friendly: Avocado provides fibre and healthy fats. Black beans are prebiotic powerhouses. It's a satisfying, gut-loving lunch.
