Iced Lemongrass & Ginger Tea

Lemongrass is bright, citrusy, and incredibly refreshing. Steeped with ginger and chilled, it makes a cooling iced tea that's perfect for warm days. It's also naturally caffeine-free.
Ingredients (Serves 2):
- 2 lemongrass stalks, bashed and roughly chopped (or 2 lemongrass tea bags)
- 3 slices of fresh ginger
- 500ml boiling water
- 1 tsp honey or maple syrup (optional)
- Ice cubes and lime slices to serve
Method:
- Steep the lemongrass and ginger in the boiling water for 10 minutes.
- Strain. Stir in honey if using. Cool, then refrigerate.
- Serve over ice with lime slices.
Why it's gut-friendly: Lemongrass is traditionally used for digestive comfort. Ginger is anti-inflammatory. A refreshing, caffeine-free drink.
