Iced Lemongrass & Ginger Tea

Lemongrass is bright, citrusy, and incredibly refreshing. Steeped with ginger and chilled, it makes a cooling iced tea that's perfect for warm days. It's also naturally caffeine-free.

Ingredients (Serves 2):

  • 2 lemongrass stalks, bashed and roughly chopped (or 2 lemongrass tea bags)
  • 3 slices of fresh ginger
  • 500ml boiling water
  • 1 tsp honey or maple syrup (optional)
  • Ice cubes and lime slices to serve

Method:

  1. Steep the lemongrass and ginger in the boiling water for 10 minutes.
  2. Strain. Stir in honey if using. Cool, then refrigerate.
  3. Serve over ice with lime slices.

Why it's gut-friendly: Lemongrass is traditionally used for digestive comfort. Ginger is anti-inflammatory. A refreshing, caffeine-free drink.
