Cucumber, Mint & Lime Cooler

This is the drink I make when I want something that tastes like a spa. It's incredibly refreshing, properly hydrating, and takes about three minutes. The cucumber is cooling. The mint is fresh. The lime makes it zing.

Why it's gut-friendly: Cucumber is hydrating and contains anti-inflammatory compounds. Mint soothes the digestive tract. Lime provides vitamin C and stimulates digestive enzymes.

Ingredients (Serves 1):

  • ¼ cucumber, roughly chopped
  • A small handful of fresh mint leaves
  • Juice of 1 lime
  • 1 tsp honey or maple syrup (optional)
  • 250ml cold water (still or sparkling)
  • Ice cubes

Method:

  1. Place the cucumber, mint leaves, lime juice, and honey if using in a blender with 100ml of the water.
  2. Blitz until smooth.
  3. Strain through a fine sieve into a glass filled with ice. (Or don't strain if you like the texture.)
  4. Top up with the remaining cold water.
  5. Stir gently and drink immediately.
