Turkey & Courgette Burgers with Sweet Potato Wedges

These are not your average burgers. They're made with turkey mince and grated courgette, which keeps them incredibly moist. Serve with baked sweet potato wedges and a dollop of yoghurt. They're light, satisfying, and packed with protein.

Ingredients (Serves 4):

  • 500g turkey mince
  • 1 small courgette, grated and squeezed dry
  • 1 egg
  • 30g breadcrumbs (use gluten-free if needed)
  • 1 tsp dried oregano
  • Salt and pepper
  • 2 large sweet potatoes, cut into wedges
  • 1 tbsp olive oil
  • Greek yoghurt to serve

Method:

  1. Preheat oven to 200°C (180°C fan). Line two baking trays with parchment.
  2. Toss the sweet potato wedges with olive oil and a pinch of salt. Spread on one tray. Bake for 30–35 minutes, turning halfway.
  3. Meanwhile, mix the turkey mince, courgette, egg, breadcrumbs, oregano, and seasoning. Shape into 4 burgers.
  4. Place the burgers on the second tray. Bake for 18–20 minutes until cooked through.
  5. Serve the burgers with the sweet potato wedges and a dollop of yoghurt.

Why it's gut-friendly: Turkey is a lean, easily digestible protein. Courgette is hydrating and gentle. Sweet potatoes provide soluble fibre. Yoghurt adds probiotics.
