Simple Prawn & Courgette Stir-Fry

This is the dinner I make when I need something fast and light. Prawns cook in minutes. Courgettes add bulk without heaviness. The ginger and soy dressing is punchy and bright. Serve with rice or just as it is.
Ingredients (Serves 2):
- 200g raw prawns, deveined
- 1 tbsp coconut oil
- 2 courgettes, spiralised or thinly sliced
- 1 garlic clove, crushed
- 1 tsp fresh ginger, grated
- 2 tbsp tamari or soy sauce
- 1 tsp sesame oil
- Juice of ½ lime
- Cooked rice to serve
Method:
- Heat the coconut oil in a wok or large frying pan over high heat.
- Add the prawns and cook for 2–3 minutes until pink. Remove to a plate.
- In the same pan, add the courgettes and stir-fry for 2 minutes.
- Add the garlic and ginger. Cook for 30 seconds.
- Return the prawns to the pan. Add the tamari and sesame oil. Toss to coat.
- Squeeze over the lime juice. Serve with rice.
Why it's gut-friendly: Prawns are a lean, easily digestible protein. Courgettes are hydrating and gentle. Ginger is a digestive aid. A light, quick dinner.
