Simple Herb & Lemon Baked Cod with Greens

This is the dinner I make when I want something that feels a bit special but takes approximately seven minutes of actual work. The cod bakes in a parcel with herbs and lemon. The greens steam alongside. It's light, fresh, and tastes like you're on a health retreat, minus the judgement.
Why it's gut-friendly: White fish is incredibly easy to digest and provides lean protein. Lemon and herbs add flavour without irritating the stomach. Steamed greens are gentle and packed with fibre and nutrients.
Ingredients (Serves 2):
- 2 cod fillets (or any firm white fish)
- 1 lemon, thinly sliced
- 2 tbsp olive oil
- 2 garlic cloves, thinly sliced (omit for low FODMAP)
- A small handful of fresh parsley and dill, roughly chopped
- Salt and pepper
- 200g green beans or tender-stem broccoli
- Cooked quinoa or new potatoes to serve
Method:
- Preheat oven to 200°C (180°C fan).
- Tear off two large squares of baking parchment or foil.
- Place a cod fillet in the centre of each. Top with lemon slices, garlic (if using), herbs, and a drizzle of olive oil. Season with salt and pepper.
- Fold the parchment over the fish and crimp the edges to seal, creating a parcel.
- Place the parcels on a baking tray and bake for 12-15 minutes, until the fish is opaque and flakes easily.
- Meanwhile, steam the green beans or broccoli until tender.
- Serve the fish with the greens and some quinoa or new potatoes, spooning the herby juices from the parcel over everything.
