Simple Baked Trout with Lemon & Herbs

Trout is the underrated cousin of salmon. It's cheaper, just as delicious, and cooks in about fifteen minutes. Baked whole with lemon, herbs, and a drizzle of olive oil. Serve with new potatoes and green beans.
Ingredients (Serves 2):
- 2 whole trout, cleaned and gutted
- 1 lemon, sliced
- A handful of fresh parsley and dill
- 2 tbsp olive oil
- Salt and pepper
- Cooked new potatoes and steamed green beans to serve
Method:
- Preheat oven to 200°C (180°C fan).
- Lay each trout on a piece of foil or baking parchment large enough to wrap it.
- Stuff the cavity of each fish with lemon slices and herbs. Drizzle with olive oil and season with salt and pepper.
- Wrap the foil loosely around the fish, sealing the edges to create a parcel.
- Place on a baking tray and bake for 15–18 minutes until the fish flakes easily.
- Serve with new potatoes and green beans.
Why it's gut-friendly: Trout is rich in omega-3s and easy to digest. Lemon and herbs are gentle digestive aids. A light, anti-inflammatory dinner.
