Simple Baked Trout with Lemon & Herbs

Trout is the underrated cousin of salmon. It's cheaper, just as delicious, and cooks in about fifteen minutes. Baked whole with lemon, herbs, and a drizzle of olive oil. Serve with new potatoes and green beans.

Ingredients (Serves 2):

  • 2 whole trout, cleaned and gutted
  • 1 lemon, sliced
  • A handful of fresh parsley and dill
  • 2 tbsp olive oil
  • Salt and pepper
  • Cooked new potatoes and steamed green beans to serve

Method:

  1. Preheat oven to 200°C (180°C fan).
  2. Lay each trout on a piece of foil or baking parchment large enough to wrap it.
  3. Stuff the cavity of each fish with lemon slices and herbs. Drizzle with olive oil and season with salt and pepper.
  4. Wrap the foil loosely around the fish, sealing the edges to create a parcel.
  5. Place on a baking tray and bake for 15–18 minutes until the fish flakes easily.
  6. Serve with new potatoes and green beans.

Why it's gut-friendly: Trout is rich in omega-3s and easy to digest. Lemon and herbs are gentle digestive aids. A light, anti-inflammatory dinner.
