Simple Baked Salmon with Lemon & Dill

This is the dinner I make when I want something that feels a bit special but takes approximately seven minutes of actual work. The salmon bakes in a parcel with lemon and dill. It steams gently, staying moist and tender. Serve with new potatoes and something green. It's light, fresh, and tastes like you're on a health retreat, minus the judgement.
Ingredients (Serves 2):
- 2 salmon fillets
- 1 lemon, thinly sliced
- A handful of fresh dill
- 2 tbsp olive oil
- Salt and pepper
- Cooked new potatoes and steamed green beans to serve
Method:
- Preheat oven to 200°C (180°C fan).
- Tear off two large squares of baking parchment or foil.
- Place a salmon fillet in the centre of each. Top with lemon slices, dill, and a drizzle of olive oil. Season with salt and pepper.
- Fold the parchment over the fish and crimp the edges to seal, creating a parcel.
- Place the parcels on a baking tray and bake for 12–15 minutes, until the salmon is opaque and flakes easily.
- Serve with new potatoes and green beans, spooning the herby juices from the parcel over everything.
Why it's gut-friendly: Salmon is packed with omega-3 fatty acids, which are anti-inflammatory and support brain health. Lemon and dill are gentle digestive aids. It's a light, easily digestible meal.
