Salmon & Leek Parcels with Dill

This is the dinner for when you want something elegant but can't be bothered with washing up. Salmon and leeks baked in a paper parcel with lemon and dill. The salmon steams gently, staying incredibly moist. It's light, fresh, and takes about five minutes to prepare.

Ingredients (Serves 2):

  • 2 salmon fillets
  • 1 leek, finely sliced (green part only for low FODMAP)
  • 1 lemon, sliced
  • A handful of fresh dill
  • 2 tbsp olive oil
  • Salt and pepper
  • New potatoes and steamed greens to serve

Method:

  1. Preheat oven to 200°C (180°C fan). Tear off two large squares of baking parchment.
  2. Place a handful of leek in the centre of each. Top with a salmon fillet.
  3. Place lemon slices and dill on top of the salmon. Drizzle with olive oil. Season.
  4. Fold the parchment over and crimp the edges to create sealed parcels.
  5. Place on a baking tray and bake for 15–18 minutes.
  6. Serve with new potatoes and steamed greens.

Why it's gut-friendly: Salmon is packed with omega-3s. Leeks are a prebiotic food, feeding good gut bacteria. Dill is a digestive aid. A light, elegant dinner.
