Salmon & Leek Parcels with Dill

This is the dinner for when you want something elegant but can't be bothered with washing up. Salmon and leeks baked in a paper parcel with lemon and dill. The salmon steams gently, staying incredibly moist. It's light, fresh, and takes about five minutes to prepare.
Ingredients (Serves 2):
- 2 salmon fillets
- 1 leek, finely sliced (green part only for low FODMAP)
- 1 lemon, sliced
- A handful of fresh dill
- 2 tbsp olive oil
- Salt and pepper
- New potatoes and steamed greens to serve
Method:
- Preheat oven to 200°C (180°C fan). Tear off two large squares of baking parchment.
- Place a handful of leek in the centre of each. Top with a salmon fillet.
- Place lemon slices and dill on top of the salmon. Drizzle with olive oil. Season.
- Fold the parchment over and crimp the edges to create sealed parcels.
- Place on a baking tray and bake for 15–18 minutes.
- Serve with new potatoes and steamed greens.
Why it's gut-friendly: Salmon is packed with omega-3s. Leeks are a prebiotic food, feeding good gut bacteria. Dill is a digestive aid. A light, elegant dinner.
