One-Pan Salmon & Asparagus with New Potatoes

This is the dinner for when you want something that looks impressive but requires almost no effort. Everything goes on one tray. The salmon stays moist. The asparagus gets crisp. The potatoes go golden. It's a complete meal with minimal washing up.

Ingredients (Serves 2):

  • 2 salmon fillets
  • 200g new potatoes, halved
  • 1 bunch of asparagus, woody ends snapped off
  • 2 tbsp olive oil
  • 1 lemon, sliced
  • Salt and pepper
  • Fresh dill to serve

Method:

  1. Preheat oven to 200°C (180°C fan). Line a baking tray with parchment.
  2. Toss the new potatoes with 1 tbsp olive oil, salt, and pepper. Spread on the tray and roast for 15 minutes.
  3. Add the asparagus and salmon fillets to the tray. Drizzle the salmon with the remaining olive oil. Season. Lay lemon slices over the salmon.
  4. Return to the oven for 12–15 minutes, until the salmon is cooked and the potatoes are tender.
  5. Scatter with fresh dill. Serve immediately.

Why it's gut-friendly: Salmon is packed with omega-3s. Asparagus is a prebiotic powerhouse. New potatoes provide gentle carbs. A light, anti-inflammatory dinner.
