Miso-Glazed Chicken with Stir-Fried Greens

This is a quick, flavour-packed dinner. Chicken thighs brushed with a sweet-savoury miso glaze and baked until sticky and golden. Serve with stir-fried greens and brown rice. It feels like a takeaway but is significantly better for your gut.
Ingredients (Serves 2):
- 4 boneless chicken thighs
- 1 tbsp white miso paste
- 1 tbsp maple syrup
- 1 tbsp tamari or soy sauce
- 1 tsp sesame oil
- 1 tsp fresh ginger, grated
- Stir-fried greens (pak choi, broccoli, or green beans) and brown rice to serve
Method:
- Preheat oven to 200°C (180°C fan). Line a baking tray with parchment.
- Mix the miso, maple syrup, tamari, sesame oil, and ginger in a small bowl.
- Place the chicken thighs on the tray. Brush generously with the miso glaze.
- Bake for 18–20 minutes until cooked through and the glaze is caramelised.
- Serve with stir-fried greens and brown rice.
Why it's gut-friendly: Miso is fermented, providing probiotics. Chicken provides lean protein. Brown rice adds prebiotic fibre. A quick, gut-friendly dinner.
