Baked Halloumi & Vegetable Traybake

This is the dinner for when you want something that feels like a Mediterranean holiday but requires almost no effort. Halloumi, courgette, peppers, and cherry tomatoes, all roasted together on one tray. The halloumi goes golden and crisp. The vegetables sweeten and soften. Serve with couscous or crusty bread.
Ingredients (Serves 2):
- 200g halloumi, sliced
- 1 courgette, cubed
- 1 red pepper, cubed
- 200g cherry tomatoes
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper
- A squeeze of lemon juice
- Couscous or crusty bread to serve
Method:
- Preheat oven to 200°C (180°C fan). Line a baking tray with parchment.
- Toss the courgette, pepper, and tomatoes with olive oil, oregano, salt, and pepper. Spread on the tray.
- Roast for 15 minutes. Add the halloumi slices to the tray.
- Return to the oven for another 10–12 minutes until the halloumi is golden and the vegetables are tender.
- Squeeze with lemon juice. Serve with couscous or crusty bread.
Why it's gut-friendly: Halloumi is a fermented cheese, providing probiotics. Courgette and peppers are gentle on the stomach and rich in fibre. Olive oil is anti-inflammatory.
