Vanilla Poached Apricots with Pistachios

Apricots poached in a vanilla syrup until soft and fragrant. They're elegant, light, and deeply comforting. Serve with a dollop of yoghurt and a sprinkle of crushed pistachios. They feel like something from a French bistro.
Ingredients (Serves 2):
- 6 ripe apricots, halved and stoned
- 250ml water
- 2 tbsp maple syrup
- 1 vanilla pod, split, or 1 tsp vanilla extract
- Greek yoghurt and crushed pistachios to serve
Method:
- Put the water, maple syrup, and vanilla in a saucepan. Bring to a gentle simmer.
- Add the apricot halves, cut-side down.
- Poach gently for 8–10 minutes, until the apricots are soft but still holding their shape.
- Remove the apricots with a slotted spoon. If you want a syrup, simmer the liquid for another 5–10 minutes until reduced.
- Serve warm with yoghurt, pistachios, and a drizzle of the syrup.
Why it's gut-friendly: Apricots are a low-FODMAP fruit, gentle on sensitive stomachs. Vanilla is calming. Yoghurt adds probiotics.
