Stewed Plums with Star Anise & Vanilla

This is the dessert I make when plums are in season and I want something that feels autumnal and cosy. The plums cook down into a jewel-toned compote. The star anise adds a subtle warmth. Spoon it over yoghurt, porridge, or just eat it from the bowl.
Why it's gut-friendly: Plums (and prunes) are famous for their gentle digestive benefits. They contain sorbitol and fibre that help keep things moving. Star anise is a carminative spice, meaning it helps reduce bloating and gas.
Ingredients (Serves 2-3):
- 6 ripe plums, halved and stoned
- 2 tbsp maple syrup or honey
- 1 star anise
- ½ vanilla pod, split, or 1 tsp vanilla extract
- 2 tbsp water
- Greek yoghurt or coconut yoghurt to serve
Method:
- Place the plum halves in a small saucepan with the maple syrup, star anise, vanilla, and water.
- Bring to a gentle simmer over medium heat.
- Reduce heat to low, cover, and cook for 10-15 minutes, stirring occasionally, until the plums are soft and have released their juices.
- Remove the lid and simmer for another 5 minutes if you want a thicker syrup.
- Remove the star anise and vanilla pod.
- Serve warm, spooned over yoghurt. Also excellent cold the next day.
