Spiced Apple & Blackberry Compote

A dark, jewel-toned compote of apples and blackberries, simmered with cinnamon and a star anise. It's delicious warm over yoghurt or porridge.

Ingredients (Serves 4):

  • 2 eating apples, cored and diced
  • 200g frozen blackberries
  • 1 cinnamon stick
  • 1 star anise
  • 2 tbsp water
  • 1 tbsp maple syrup

Method:

  1. Put everything in a saucepan. Simmer gently for 10–15 minutes until the apples are soft and the blackberries have burst.
  2. Remove the whole spices. Serve warm or cold.

Why it's gut-friendly: Apples and blackberries are packed with polyphenols and fibre. Cinnamon and star anise are digestive aids.
