Spiced Apple & Blackberry Compote

A dark, jewel-toned compote of apples and blackberries, simmered with cinnamon and a star anise. It's delicious warm over yoghurt or porridge.
Ingredients (Serves 4):
- 2 eating apples, cored and diced
- 200g frozen blackberries
- 1 cinnamon stick
- 1 star anise
- 2 tbsp water
- 1 tbsp maple syrup
Method:
- Put everything in a saucepan. Simmer gently for 10–15 minutes until the apples are soft and the blackberries have burst.
- Remove the whole spices. Serve warm or cold.
Why it's gut-friendly: Apples and blackberries are packed with polyphenols and fibre. Cinnamon and star anise are digestive aids.
