Raspberry & Coconut Ice Lollies

These are just raspberries, coconut milk, and a touch of maple syrup, blended and frozen into lollies. They're refreshing, tangy, and perfect for warm days. They're also significantly cheaper and healthier than anything you'd buy.
Ingredients (Makes 4–6 lollies):
- 200g frozen raspberries
- 200ml coconut milk
- 2 tbsp maple syrup
- 1 tsp vanilla extract
Method:
- Blitz all ingredients in a blender until smooth.
- Pour into lolly moulds. Insert sticks.
- Freeze for at least 4 hours until solid.
- Run under warm water briefly to release.
Why it's gut-friendly: Raspberries are packed with fibre and polyphenols. Coconut milk adds healthy fats. No refined sugar. A cool, gut-friendly treat.
