Pineapple & Mint Sorbet (No Ice Cream Maker)

A refreshing, two-ingredient sorbet. Frozen pineapple blitzed with fresh mint until it's smooth and creamy. It's like summer in a bowl.

Ingredients (Serves 2):

  • 300g frozen pineapple chunks
  • A large handful of fresh mint leaves
  • A splash of water, if needed

Method:

  1. Put the pineapple and mint in a food processor. Blitz, scraping down the sides, until smooth and creamy.
  2. Serve immediately, or freeze for an hour for a firmer scoop.

Why it's gut-friendly: Pineapple contains bromelain, an enzyme that aids protein digestion. Mint soothes the stomach. No added sugar.
