Maple & Pecan Stuffed Baked Apples

This is the dessert version of a classic breakfast. Apples, cored and stuffed with pecans, oats, maple syrup, and cinnamon, then baked until soft and collapsing. Serve with yoghurt or just as they are. They make the whole house smell like autumn.

Ingredients (Serves 2):

  • 2 large eating apples
  • 2 tbsp chopped pecans
  • 1 tbsp rolled oats
  • 1 tbsp maple syrup
  • ½ tsp cinnamon
  • A small knob of butter or coconut oil

Method:

  1. Preheat oven to 180°C (160°C fan).
  2. Core the apples, leaving the bottom intact. Widen the cavity slightly.
  3. Mix the pecans, oats, maple syrup, and cinnamon. Stuff into the apples.
  4. Top each with a tiny knob of butter.
  5. Place in a baking dish with a splash of water. Bake for 30–35 minutes until soft.
  6. Serve warm.

Why it's gut-friendly: Apples are rich in pectin. Pecans and oats provide fibre. Maple syrup is a natural sweetener. A warm, comforting dessert.
