Flourless Almond & Orange Cake

This is the cake I make when I want something that feels properly celebratory but doesn't contain flour, refined sugar, or anything that's going to make my stomach hate me later. It's moist, fragrant, and tastes even better the next day.

Why it's gut-friendly: Almonds are rich in fibre, healthy fats, and vitamin E. Using whole oranges (boiled and blended) adds fibre and natural sweetness without refined sugar. It's gluten-free and gentle on digestion.

Ingredients (Serves 8):

  • 2 large oranges (unwaxed if possible)
  • 4 eggs
  • 200g ground almonds
  • 100g maple syrup or honey
  • 1 tsp baking powder (gluten-free if needed)
  • Pinch of salt
  • Greek yoghurt and extra orange zest to serve

Method:

  1. Place the whole oranges in a saucepan and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour until very soft. Drain and leave to cool.
  2. Preheat oven to 170°C (150°C fan). Grease and line a 20cm round cake tin.
  3. Cut the cooled oranges in half, remove any pips, and place the whole oranges (skin and all) in a blender or food processor. Blitz until smooth.
  4. In a large bowl, whisk the eggs. Add the orange purée, ground almonds, maple syrup, baking powder, and salt. Mix until well combined.
  5. Pour the batter into the prepared tin and smooth the top.
  6. Bake for 45-50 minutes, until golden and a skewer inserted in the centre comes out clean.
  7. Leave to cool completely in the tin before removing.
  8. Serve with a dollop of Greek yoghurt and a scatter of orange zest.
