Dark Chocolate & Cherry Oat Crumble

This is a crumble, but not as you know it. Dark cherries, rich dark chocolate, and an oaty topping. It's decadent without being heavy. Serve warm with yoghurt or a splash of cream. It's the kind of dessert that makes you feel like you've done something very good for yourself.
Ingredients (Serves 4):
- 400g frozen dark cherries
- 1 tbsp maple syrup
- 1 tbsp cornflour (or arrowroot)
- 50g dark chocolate, roughly chopped
- 100g rolled oats
- 50g ground almonds
- 2 tbsp melted coconut oil or butter
- 1 tbsp maple syrup (extra)
Method:
- Preheat oven to 180°C (160°C fan).
- Toss the cherries with the maple syrup and cornflour. Pour into a baking dish.
- Scatter the chopped chocolate over the cherries.
- In a bowl, mix the oats, ground almonds, melted coconut oil, and extra maple syrup until crumbly.
- Sprinkle the oat mixture over the cherries.
- Bake for 25–30 minutes until golden and bubbling.
- Serve warm.
Why it's gut-friendly: Cherries are rich in polyphenols and fibre. Dark chocolate contains prebiotic compounds. Oats and almonds add fibre. A decadent, gut-friendly pudding.
