Dark Chocolate & Cherry Mousse (Dairy-Free)

This is a rich, silky mousse made from dark chocolate and silken tofu. I know. It sounds wrong. But trust me—the tofu disappears into the chocolate, leaving only creaminess. The cherries add brightness. It's a proper dessert that happens to be dairy-free and packed with protein.
Ingredients (Serves 2):
- 100g dark chocolate (70% or higher), melted
- 150g silken tofu
- 1 tbsp maple syrup
- ½ tsp vanilla extract
- Pinch of salt
- 100g frozen cherries, thawed
- 1 tsp chia seeds (to thicken the cherries)
Method:
- Put the melted chocolate, tofu, maple syrup, vanilla, and salt in a blender. Blitz until completely smooth.
- Pour into two ramekins. Refrigerate for at least 2 hours until set.
- Meanwhile, warm the cherries in a small pan. Stir in the chia seeds and let them thicken. Cool.
- Serve the mousse topped with the cherry compote.
Why it's gut-friendly: Dark chocolate contains prebiotic polyphenols. Silken tofu is easy to digest and provides protein. Cherries are rich in antioxidants. A decadent, gut-friendly dessert.
