Coconut & Rose Chia Pudding

A fragrant, dairy-free pudding. Chia seeds soaked in coconut milk with a hint of rosewater and cardamom. It's delicate, floral, and feels like a treat from a Persian kitchen.

Ingredients (Serves 2):

  • 4 tbsp chia seeds
  • 200ml coconut milk
  • 1 tbsp maple syrup
  • ¼ tsp ground cardamom
  • A drop of rosewater (optional)
  • Crushed pistachios to serve

Method:

  1. Whisk everything together. Refrigerate for at least 4 hours, or overnight.
  2. Stir well, top with pistachios.

Why it's gut-friendly: Chia seeds are a fibre superstar. Coconut milk is gentle. Cardamom aids digestion.
