Coconut & Rose Chia Pudding

A fragrant, dairy-free pudding. Chia seeds soaked in coconut milk with a hint of rosewater and cardamom. It's delicate, floral, and feels like a treat from a Persian kitchen.
Ingredients (Serves 2):
- 4 tbsp chia seeds
- 200ml coconut milk
- 1 tbsp maple syrup
- ¼ tsp ground cardamom
- A drop of rosewater (optional)
- Crushed pistachios to serve
Method:
- Whisk everything together. Refrigerate for at least 4 hours, or overnight.
- Stir well, top with pistachios.
Why it's gut-friendly: Chia seeds are a fibre superstar. Coconut milk is gentle. Cardamom aids digestion.
