Coconut & Passion Fruit Panna Cotta (Dairy-Free)

This is a cheat's panna cotta—no gelatine, no dairy, no faff. Coconut milk sets with a little agar or just chia seeds, topped with fresh passion fruit. It's creamy, tangy, and feels like a proper restaurant dessert.

Ingredients (Serves 2):

  • 200ml coconut milk
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract
  • 2 tbsp chia seeds (for a softer set) OR ½ tsp agar powder (for a firmer set)
  • 2 passion fruits, halved

Method:

  1. If using chia seeds: whisk the coconut milk, maple syrup, vanilla, and chia seeds together. Refrigerate for at least 4 hours or overnight.
  2. If using agar: warm the coconut milk, maple syrup, and vanilla in a pan. Stir in the agar and simmer for 2 minutes. Pour into ramekins and refrigerate until set.
  3. To serve, top with the pulp of a passion fruit.

Why it's gut-friendly: Coconut milk provides healthy fats. Chia seeds are fibre superstars. Passion fruit is rich in fibre and vitamin C. A dairy-free, gut-friendly dessert.
