Coconut & Passion Fruit Panna Cotta (Dairy-Free)

This is a cheat's panna cotta—no gelatine, no dairy, no faff. Coconut milk sets with a little agar or just chia seeds, topped with fresh passion fruit. It's creamy, tangy, and feels like a proper restaurant dessert.
Ingredients (Serves 2):
- 200ml coconut milk
- 1 tbsp maple syrup
- ½ tsp vanilla extract
- 2 tbsp chia seeds (for a softer set) OR ½ tsp agar powder (for a firmer set)
- 2 passion fruits, halved
Method:
- If using chia seeds: whisk the coconut milk, maple syrup, vanilla, and chia seeds together. Refrigerate for at least 4 hours or overnight.
- If using agar: warm the coconut milk, maple syrup, and vanilla in a pan. Stir in the agar and simmer for 2 minutes. Pour into ramekins and refrigerate until set.
- To serve, top with the pulp of a passion fruit.
