Coconut & Mango Chia Parfait

This looks fancy but it's just layers of coconut chia pudding and fresh mango. It takes five minutes to assemble and then the fridge does the rest. Serve in a nice glass and suddenly it's a Proper Dessert.

Ingredients (Serves 2):

  • 4 tbsp chia seeds
  • 200ml coconut milk
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract
  • 1 ripe mango, diced
  • Toasted coconut flakes to serve

Method:

  1. Whisk the chia seeds, coconut milk, maple syrup, and vanilla. Let sit for 5 minutes, then stir again.
  2. Refrigerate for at least 4 hours or overnight.
  3. To serve, layer the chia pudding and diced mango in glasses.
  4. Top with toasted coconut flakes.

Why it's gut-friendly: Chia seeds are fibre superstars. Coconut milk provides healthy fats. Mango adds vitamin C and fibre. A no-sugar-added dessert.
