Coconut & Lime Chia Pudding

Yes, I've put this in breakfast and dessert. It works for both. For dessert, serve it in a nice glass, maybe with some toasted coconut on top, and suddenly it's a Proper Pudding. No one needs to know it took five minutes and is basically fibre and healthy fats.

Why it's gut-friendly: Chia seeds are fibre superstars. They absorb liquid and form a gel that soothes the digestive tract and feeds good gut bacteria. Coconut milk provides healthy fats that are gentle on the stomach.

Ingredients (Serves 2):

  • 4 tbsp chia seeds
  • 1 x 400ml tin of full-fat coconut milk
  • 2 tbsp maple syrup
  • Zest and juice of 1 lime
  • 1 tsp vanilla extract
  • Pinch of salt

To serve:

  • Toasted coconut flakes
  • Fresh mango or passion fruit

Method:

  1. In a bowl or large jug, whisk together the coconut milk, maple syrup, lime zest, lime juice, vanilla, and salt.
  2. Stir in the chia seeds until well combined. Wait 5 minutes, then stir again to prevent clumping.
  3. Divide between two glasses or small bowls.
  4. Cover and refrigerate for at least 4 hours, or overnight.
  5. Before serving, top with toasted coconut flakes and fresh fruit.
