Banana & Peanut Butter "Nice" Cream

This is not ice cream. It's frozen bananas blended until they become creamy and soft-serve-like. It's magic. It's also just fruit. Add a spoonful of peanut butter and it becomes a proper dessert. It's vegan, gluten-free, and requires exactly two ingredients. You can eat it for breakfast if you want. I have.
Ingredients (Serves 1):
- 1 ripe banana, peeled, sliced, and frozen
- 1 tbsp peanut butter (the drippy kind)
- Optional: a splash of milk to help it blend, a sprinkle of dark chocolate chips
Method:
- Put the frozen banana slices and peanut butter in a blender or small food processor.
- Blitz until smooth and creamy. You may need to scrape down the sides a few times. Add a tiny splash of milk if it's struggling.
- Scoop into a bowl and eat immediately. It melts fast. Top with dark chocolate chips if you're feeling fancy.
Why it's gut-friendly: Bananas are rich in potassium and gentle on the stomach. Peanut butter adds protein and healthy fats. No refined sugar, no dairy (unless you add milk), just fruit.
