Baked Rhubarb with Orange & Ginger

Rhubarb is sharp, bright, and completely transformed by a little time in the oven. Baked with orange juice and ginger, it becomes soft, tangy, and deeply comforting. Serve with yoghurt or custard. It's spring in a bowl.
Ingredients (Serves 2):
- 300g rhubarb, cut into batons
- Juice of 1 orange
- 1 tbsp maple syrup
- 1 tsp fresh ginger, grated
- Greek yoghurt or custard to serve
Method:
- Preheat oven to 180°C (160°C fan).
- Place the rhubarb in a baking dish. Pour over the orange juice and maple syrup. Scatter with ginger.
- Cover with foil and bake for 15–20 minutes, until the rhubarb is tender but still holding its shape.
- Serve warm with yoghurt or custard.
Why it's gut-friendly: Rhubarb is a prebiotic food, feeding good gut bacteria. Ginger is anti-inflammatory. Orange juice adds vitamin C. A light, tangy dessert.
