Baked Rhubarb with Orange & Ginger

Rhubarb is sharp, bright, and completely transformed by a little time in the oven. Baked with orange juice and ginger, it becomes soft, tangy, and deeply comforting. Serve with yoghurt or custard. It's spring in a bowl.

Ingredients (Serves 2):

  • 300g rhubarb, cut into batons
  • Juice of 1 orange
  • 1 tbsp maple syrup
  • 1 tsp fresh ginger, grated
  • Greek yoghurt or custard to serve

Method:

  1. Preheat oven to 180°C (160°C fan).
  2. Place the rhubarb in a baking dish. Pour over the orange juice and maple syrup. Scatter with ginger.
  3. Cover with foil and bake for 15–20 minutes, until the rhubarb is tender but still holding its shape.
  4. Serve warm with yoghurt or custard.

Why it's gut-friendly: Rhubarb is a prebiotic food, feeding good gut bacteria. Ginger is anti-inflammatory. Orange juice adds vitamin C. A light, tangy dessert.
