Baked Nectarines with Vanilla & Almonds

Nectarines are essentially peaches without the fuzz. Baked until soft and juicy, with a hint of vanilla and a scatter of flaked almonds. They're light, fragrant, and perfect for summer. Serve with yoghurt or just as they are.
Ingredients (Serves 2):
- 2 ripe nectarines, halved and stoned
- ½ tsp vanilla extract
- 1 tsp maple syrup
- 1 tbsp flaked almonds
- Greek yoghurt to serve
Method:
- Preheat oven to 180°C (160°C fan).
- Place the nectarine halves cut-side up in a small baking dish.
- Drizzle with vanilla and maple syrup. Scatter with almonds.
- Bake for 15–18 minutes until soft and juicy.
- Serve warm with yoghurt.
Why it's gut-friendly: Nectarines are a low-FODMAP fruit, gentle on sensitive stomachs. Almonds add fibre and vitamin E. A light, summery dessert.
