Baked Custard with Nutmeg

This is the simplest dessert in the world. Milk, eggs, a little maple syrup, and nutmeg. Baked gently until just set and wobbling. It's nursery food for grown-ups. Warm, soothing, and deeply comforting.

Ingredients (Serves 4):

  • 500ml whole milk (or oat milk)
  • 3 eggs
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • A generous grating of nutmeg

Method:

  1. Preheat oven to 150°C (130°C fan).
  2. Warm the milk gently until steaming. Don't boil.
  3. Whisk the eggs, maple syrup, and vanilla. Slowly pour in the warm milk, whisking constantly.
  4. Pour into four ramekins. Grate nutmeg over the top.
  5. Place in a deep baking dish. Pour hot water into the dish until it comes halfway up the sides of the ramekins.
  6. Bake for 30–35 minutes until set but still slightly wobbly.
  7. Serve warm or chilled.

Why it's gut-friendly: Eggs provide high-quality protein. Nutmeg is traditionally used as a gentle digestive aid. A light, soothing dessert.
