Almond & Pear Tart (Gluten-Free)

This is a rustic, free-form tart. A soft almond frangipane, topped with sliced pears, baked until golden. It's gluten-free, naturally sweetened, and feels like something from a French patisserie. Serve warm with a dollop of crème fraîche.
Ingredients (Serves 6–8):
- 2 ripe pears, cored and thinly sliced
- 100g ground almonds
- 50g butter, softened
- 2 tbsp maple syrup
- 1 egg
- ½ tsp almond extract (optional)
- A handful of flaked almonds
Method:
- Preheat oven to 180°C (160°C fan). Line a baking tray with parchment.
- Mix the ground almonds, butter, maple syrup, egg, and almond extract until smooth.
- Spread the almond mixture into a rough circle on the parchment.
- Arrange the pear slices on top. Scatter with flaked almonds.
- Bake for 20–25 minutes, until golden and firm.
- Serve warm.
Why it's gut-friendly: Almonds provide fibre and vitamin E. Pears are rich in soluble fibre. Naturally sweetened, gluten-free, and gentle on digestion.
