Almond & Pear Tart (Gluten-Free)

This is a rustic, free-form tart. A soft almond frangipane, topped with sliced pears, baked until golden. It's gluten-free, naturally sweetened, and feels like something from a French patisserie. Serve warm with a dollop of crème fraîche.

Ingredients (Serves 6–8):

  • 2 ripe pears, cored and thinly sliced
  • 100g ground almonds
  • 50g butter, softened
  • 2 tbsp maple syrup
  • 1 egg
  • ½ tsp almond extract (optional)
  • A handful of flaked almonds

Method:

  1. Preheat oven to 180°C (160°C fan). Line a baking tray with parchment.
  2. Mix the ground almonds, butter, maple syrup, egg, and almond extract until smooth.
  3. Spread the almond mixture into a rough circle on the parchment.
  4. Arrange the pear slices on top. Scatter with flaked almonds.
  5. Bake for 20–25 minutes, until golden and firm.
  6. Serve warm.

Why it's gut-friendly: Almonds provide fibre and vitamin E. Pears are rich in soluble fibre. Naturally sweetened, gluten-free, and gentle on digestion.
