Spiced Carrot Cake Porridge

This is porridge that tastes like carrot cake. Grated carrot cooked into the oats with cinnamon, ginger, and a touch of maple syrup. Topped with walnuts and a dollop of yoghurt. It's warm, comforting, and feels like a treat without being one.
Ingredients (Serves 1):
- 50g rolled oats
- 250ml milk of choice
- 1 small carrot, grated
- ½ tsp cinnamon
- ¼ tsp ground ginger
- Pinch of salt
- 1 tbsp maple syrup
- A handful of chopped walnuts
- A dollop of Greek yoghurt to serve
Method:
- Put the oats, milk, grated carrot, cinnamon, ginger, and salt in a small saucepan.
- Bring to a gentle simmer. Cook, stirring occasionally, for 5–7 minutes until thick and creamy.
- Stir in the maple syrup.
- Pour into a bowl. Top with walnuts and a dollop of yoghurt.
Why it's gut-friendly: Oats and carrots both provide soluble fibre. Cinnamon and ginger are anti-inflammatory. Walnuts add omega-3s. Yoghurt provides probiotics.
