Spiced Carrot Cake Porridge

This is porridge that tastes like carrot cake. Grated carrot cooked into the oats with cinnamon, ginger, and a touch of maple syrup. Topped with walnuts and a dollop of yoghurt. It's warm, comforting, and feels like a treat without being one.

Ingredients (Serves 1):

  • 50g rolled oats
  • 250ml milk of choice
  • 1 small carrot, grated
  • ½ tsp cinnamon
  • ¼ tsp ground ginger
  • Pinch of salt
  • 1 tbsp maple syrup
  • A handful of chopped walnuts
  • A dollop of Greek yoghurt to serve

Method:

  1. Put the oats, milk, grated carrot, cinnamon, ginger, and salt in a small saucepan.
  2. Bring to a gentle simmer. Cook, stirring occasionally, for 5–7 minutes until thick and creamy.
  3. Stir in the maple syrup.
  4. Pour into a bowl. Top with walnuts and a dollop of yoghurt.

Why it's gut-friendly: Oats and carrots both provide soluble fibre. Cinnamon and ginger are anti-inflammatory. Walnuts add omega-3s. Yoghurt provides probiotics.
