Savoury Miso Oats with Soft Egg & Spring Onions

Savoury Miso Oats with Soft Egg & Spring Onions

Oats don't have to be sweet. I know this sounds wrong. Like putting ketchup on a cake. But stay with me.

Savoury oats are a thing. A good thing. They're creamy and comforting and taste a bit like a warm hug from someone who knows how to cook. The miso adds a deep, savoury umami and—crucially—a hit of probiotics. (Miso is fermented. Your gut bacteria love fermented things.)

Top it with a soft egg, some spring onions, and a drizzle of sesame oil, and you've got a breakfast that feels like dinner. In a good way. In a "I can't believe this is oats" way.

Try it once. If you hate it, you can go back to sweet oats. But you won't hate it.

Oats don't have to be sweet. I know. It sounds wrong. But trust me on this—savoury oats are a game-changer. They're creamy, comforting, and taste a bit like a warm hug from someone who knows how to cook.

Why it's gut-friendly: Miso is a fermented food, meaning it contains live probiotics that support your gut microbiome. Oats provide prebiotic fibre to feed those good bacteria. It's a proper gut-brain axis power couple.

Ingredients (Serves 1):

  • 50g rolled oats
  • 250ml water or vegetable stock
  • 1 tsp white miso paste
  • 1 egg
  • 1 spring onion, finely sliced
  • A drizzle of sesame oil
  • A sprinkle of sesame seeds (optional)

Method:

  1. In a small saucepan, combine the oats and water or stock. Bring to a simmer and cook for 4-5 minutes, stirring occasionally, until creamy.
  2. Remove from heat and stir in the miso paste until fully dissolved.
  3. Meanwhile, cook the egg to your liking—poached, soft-boiled, or fried.
  4. Spoon the oats into a bowl. Top with the egg, spring onion, a drizzle of sesame oil, and sesame seeds if using.
  5. Eat immediately, feeling quietly smug about how sophisticated you are.
