Savoury Cottage Cheese & Cucumber Toast

Sometimes you want something fresh. Not sweet. Not porridge. Just... clean. This is that breakfast. Cold, crisp cucumber. Creamy cottage cheese. A squeeze of lemon. A grind of pepper. On sourdough, because we're not animals. It takes three minutes. It tastes like a spa breakfast but costs approximately 80p.
Ingredients (Serves 1):
- 1 thick slice of sourdough bread
- 100g cottage cheese (full-fat is best)
- ¼ cucumber, thinly sliced
- Squeeze of lemon juice
- Salt and pepper
- Optional: fresh dill or chives
Method:
- Toast the sourdough until golden and crisp.
- Spread the cottage cheese generously over the toast.
- Arrange cucumber slices on top. Overlap them nicely if you're feeling fancy.
- Squeeze over a little lemon juice. Season with salt and pepper.
- Scatter with herbs if using.
- Eat immediately. Feel clean and virtuous.
Why it's gut-friendly: Cottage cheese is fermented (if you buy the live culture kind), providing probiotics. Cucumber is hydrating and gentle on the stomach. Sourdough is easier to digest than regular bread.
