Savoury Cottage Cheese & Cucumber Toast

Sometimes you want something fresh. Not sweet. Not porridge. Just... clean. This is that breakfast. Cold, crisp cucumber. Creamy cottage cheese. A squeeze of lemon. A grind of pepper. On sourdough, because we're not animals. It takes three minutes. It tastes like a spa breakfast but costs approximately 80p.

Ingredients (Serves 1):

  • 1 thick slice of sourdough bread
  • 100g cottage cheese (full-fat is best)
  • ¼ cucumber, thinly sliced
  • Squeeze of lemon juice
  • Salt and pepper
  • Optional: fresh dill or chives

Method:

  1. Toast the sourdough until golden and crisp.
  2. Spread the cottage cheese generously over the toast.
  3. Arrange cucumber slices on top. Overlap them nicely if you're feeling fancy.
  4. Squeeze over a little lemon juice. Season with salt and pepper.
  5. Scatter with herbs if using.
  6. Eat immediately. Feel clean and virtuous.

Why it's gut-friendly: Cottage cheese is fermented (if you buy the live culture kind), providing probiotics. Cucumber is hydrating and gentle on the stomach. Sourdough is easier to digest than regular bread.
