Mango & Ginger Sunshine Smoothie Bowl

A thick, spoonable smoothie bowl that tastes like a tropical holiday. Frozen mango, a thumb of fresh ginger, and a splash of kefir for a probiotic punch. Top with coconut and seeds for crunch.

Ingredients (Serves 1):

  • 150g frozen mango chunks
  • 1 small ripe banana
  • 1 tsp fresh ginger, grated
  • 100ml plain kefir or coconut yoghurt
  • To serve: toasted coconut flakes, a sprinkle of chia seeds

Method:

  1. Blitz the mango, banana, ginger, and kefir in a blender until completely smooth and thick. You may need to scrape down the sides.
  2. Pour into a bowl and top with coconut and chia seeds.

Why it's gut-friendly: Mango is rich in vitamin C and fibre. Kefir provides probiotics. Ginger is anti-inflammatory.
