Gentle Ginger & Turmeric Congee

Congee is rice porridge. It's what you eat when your stomach is off, your nervous system is fried, and you need something that feels like a warm blanket from the inside. It's incredibly easy to digest, deeply comforting, and the ginger and turmeric add anti-inflammatory goodness. This is my "I can't face anything" breakfast. It's also my "I'm feeling fragile and need something gentle" breakfast. It's just... good.
Ingredients (Serves 1–2):
- 50g jasmine rice (or any white rice)
- 750ml water or vegetable stock
- 1 tsp fresh ginger, grated
- ¼ tsp ground turmeric
- Pinch of salt
- To serve: a drizzle of sesame oil, a soft-boiled egg, sliced spring onion (green part only), a sprinkle of sesame seeds
Method:
- Rinse the rice under cold water until the water runs clear.
- Put the rice, water or stock, ginger, turmeric, and salt in a medium saucepan.
- Bring to a boil, then reduce heat to low. Cover and simmer for 45–60 minutes, stirring occasionally to prevent sticking, until the rice has completely broken down and the mixture is thick and creamy. Add more water if it gets too thick.
- Ladle into a bowl. Top with a drizzle of sesame oil, a soft-boiled egg, spring onion, and sesame seeds.
- Eat slowly. Let it warm you from the inside.
Why it's gut-friendly: Congee is one of the most easily digestible foods you can eat—the rice is cooked until it's practically pre-digested. Ginger and turmeric are powerfully anti-inflammatory and support digestion. It's gentle, warming, and perfect for sensitive stomachs.
