Courgette & Oat Breakfast Fritters

These are somewhere between a fritter and a pancake. Grated courgette, oats, egg, and a bit of cheese, fried until golden and crisp. They're savoury, satisfying, and a great way to sneak some greens into your morning without feeling like you're eating a salad at 8am.
Ingredients (Serves 1, makes 4–5 fritters):
- 1 small courgette, grated
- 50g rolled oats (blitzed to a coarse flour)
- 1 egg
- 20g Parmesan or cheddar, grated (optional)
- Salt and pepper
- Olive oil for frying
- A dollop of Greek yoghurt and a squeeze of lemon to serve
Method:
- Put the grated courgette in a clean tea towel and squeeze out as much liquid as you can. (This stops the fritters being soggy.)
- In a bowl, mix the courgette, oat flour, egg, cheese if using, and a pinch of salt and pepper.
- Heat a generous drizzle of olive oil in a non-stick frying pan over medium heat.
- Spoon tablespoon-sized dollops of the mixture into the pan. Flatten slightly.
- Cook for 3–4 minutes per side, until golden and crisp.
- Serve with a dollop of yoghurt and a squeeze of lemon.
Why it's gut-friendly: Courgette is hydrating and gentle on the stomach. Oats provide prebiotic fibre. Eggs add protein. A light, savoury breakfast that won't weigh you down.
